Riofrio – this small town in Granada is famous for producing real caviar. What is the secret of Riofrio’s luxurious caviar? Discover the Andalusian delicacy, organic caviar, served in Michelin-starred restaurants around the world!
Organic, i.e. without preservatives
Riofrio is located in the Sierra de Loja, where the conditions for caviar production are perfect. Andalusian producers have managed to obtain delicate and fresh caviar, without the use of preservatives, without growth accelerators, pesticides, GMOs, with concern for the environment and animal welfare. The sturgeon is farmed in three tanks through which the water of the Frío River flows. The company has a long tradition of producing these specialities – it has been doing so since 1963.
Excursion to the land of the sturgeon
At Riofrio, you can see all the stages of caviar production and take part in a tasting. There are five types of tours to choose from, during which specialists will introduce you to the secrets of sturgeon farming. The visit lasts about 45 minutes and culminates in a caviar tasting with a glass of champagne or vodka. This delicacy is best tasted without any other accompaniments in order to get the most accurate sense of its flavour and aroma. The chef at Caviar de Riofrío can also prepare it together with quail eggs or prepare the establishment’s speciality – fried eggs with caviar.
